I purchase a rotisserie chicken each time I am in Costco. I created a dish with many of the same ingredients for this recipe. Only I used chicken broth and butter while sauteing the onions, garlic, celery and bell peppers. After that, I use cream of mushroom soup with milk. I cut up a tomato in small pieces, and put 1 tbsp of flour in milk to thicken the gravy. I added besides salt and fresh pepper, but smoked paprika and tarragon and dried basil. I then boiled No Yolks noodles. Combined all together, and it was great. Later I told my husband I should have put other ingredients and top with cheese to put in the oven. Then you post the above recipe. The brain is a terrible thing to waste, so use it, everyone, and you can create things you never thought of before.

I've got a very similar recipe that I like a lot better than this one. This was just ok. The casserole dish was way too big, so the casserole couldn't come together as nicely. I was left with some dry corn tortillas. Was just too thin. I'd mix everything together and add more cheese, and use a smaller, deeper dish.

Used the little multi-colored peppers and added fresh mushrooms, The richness is amazing, also had great soup to boot...used thighs instead of chicken (perhaps that helped with richness?)

Living in Oregon, I raised a lot of rabbits, thus had a lot of rabbit carcasses with which to deal. This recipe is a perfect example of what can be done with rabbit, substituted for the chicken. A favorite in our house!

Delicious! My husband and son even loved the leftovers. I baked the chicken rather than boiling. Besides that I pretty much followed the recipe. We ate it with hot sauce and sour cream on top. This is a winner!

Am I missing something?! Both times that I have made this recipe -- a few years apart and in different kitchens -- the casserole has been runny. Has anyone else experienced this? What am I possibly doing wrong?

Loved this! I used 3 large bone-in breasts instead of whole cut up chicken, otherwise followed exactly. Wouldn't change anything else. Not too spicy, just right. All of family loved it. Looking forward to lunch tomorrow after all the comments about how it improves. I think this is a great weekend supper or for a casual dinner with friends. Make some guacamole and a side salad and it's great for company. MAKE WITH CONFIDENCE!

Of course I had to fix this with my variations. Boiled chicken breasts in water with 2 chicken bouillon cubes. Cooled overnight in fridge, shredded next AM. I always use about half the onion suggested to suit our tastes. Also subbed the milder red pepper instead of green pepper. I did add an extra cup of broth to the soup mixture, and glad I did because the finished product could have used a touch more fluid. Overall - delicious! It did take about an hour to put together, plus the hour to cook and cool, so it's not something I would do when I got home from work and wanted to eat before 10 p.m.! My brother made this about a year ago and I can attest that it's even more fabulous the next day. Can't wait 'til tomorrow!

I have made this twice, no shortcuts and it is worth the time to cook your own chicken. (I freeze any leftover broth for tortilla soup) My daughter was asking last night when I would make this again.

I thought this was a very good recipe that improved with age. My husband especially thougtht it tasted better the next day. I followed the lightened version but baked it for 55 min. like in the original version. Nice and spicy....but not too spicy.

My husband and I are gourmet cooks but I must say, we didn’t grow-up that way. I loved this recipe because it reminds us both of comfort foods that were cooked for us growing up! And he loves anything that has a mexican taste to it. I used their "time savers" at the bottom of the recipe by buying a rotisserie chicken and canned broth. I also added one chopped jalapeno and some chipotle powder because we like spicy. Before serving topped it with fresh chopped cilantro.

Our Family loved this one!! It took a little bit to make this one, so next time I will try canned chicken. The chicken was delicious alone and would definitely reccommend that recipe for anyone that wants to just have chicken!

This one did not go over well with my family and we love recipes like this one normally. I was very excited to make it but in the end most of it ended up in the trash because no one would touch much of it. I would not suggest this recipe to anyone. If you want a good one do the green chili chicken casserole. That recipe is amazing and always asked for every month when we make up the menu.

This is a good, solid recipe of a Mexican-style chicken casserole. Instead of the cream-of-mushroom and cream-of-chicken soup, I used two packages of Trader Joe's cream-of-portabello-mushroom soup and it was great. It's even better as leftovers the second day after all the flavors settle together.

I followed the recipe pretty much exactly except I did not have three cups of cheddar but I found a good size piece of smoked Gouda in my fridge and shredded some of that to make 3 total cups. The smoky taste of the Gouda was a great contribution! My husband and kids liked it. It made lots so I have been enjoying the leftovers for my lunch at work. Yummy!

I made this King Ranch casserole last Sat when our kids & grandchildren came over. It was wonderful!!! Even my 91 year old mom liked it. I would definitely recommend it. It makes up to 10 servings . It's good for a potluck. I used all thigh meat , which was on sale in our area. I purchased 5 lbs. of chicken. Try it, you'll like it !!!

Disgusting! I followed the directions exactly as written. Tortillas were mushy inside and crunchy/chewy outside. Will not make again. This one ended up in the trash and I had to make PB&J for the family for dinner. :-(

My family adored this!!! Husband and High school son had 3 helpings... and made me commit to keeping it in the repertoire. I followed the recipe, but cheated with two rotisserie chickens from the store (not one) then just used chicken broth and I added diced jalapenos ( just a bit ) from a can. Don't make this unless you want to hear what an amazing wife and mother you are. : )

This recipe is a keeper! I cook my chicken in a pressure cooker without the celery and carrots and it's still very delicious. That part can be done ahead of time making prep time really fast.

Texas girl, if you had read the recipe or made it you'd realize that the carrots and celery are simply for flavoring the chicken/broth when cooking it. They don't go into the casserole. Great recipe, I made a few subs but overall a nice comfort food meal.

Excellent, tasty casserole! Lightened it up a bit with low-sodium, low-fat soups. Also, used EVOO instead of butter. Will use rotisserie chicken from store to speed up recipe next time.

Awesome! I did a healthier version with boneless, skinless chicken breasts, cooked it in low sodium chicken broth instead of the water (but still included the veggies). I used low sodium/low fat soups and I couldn't find the tomato mix so used regular diced tomatos and a small can of the chilies. It turned out delish!

This is now one of the absolute favorite dishes that I cook in our household. My husband and five year old son, who are both very picky, LOVE it. My son even chose this chicken casserole over mac-and-cheese! The only thing I did differently was to not add the carrots, celery and cumin. I am so excited to have found this recipe!

All of my kids LOVED this! Other than omitting the cayenne pepper because I have kids with sensitive taste buds, I followed the recipe exactly. In the future I think I'd take the quick route and buy a roasted chicken and packaged chicken broth. I am also going to try the reduced fat soups. I think cilantro would be really good sprinkled on before serving. We topped with a little sour cream. It will be a staple for now on.

FIrst - this is so fifties. Two cans of soup?! Are you kidding me? This must be loaded with so much salt, you've gotten your daily ration in one helping. Second - I agree with the gal from Texas. There are some ingredients in this that make it less than authentic. I am truly not impressed with very many of the casserole recipes listed on this site. They should all be updated to use fresh ingredients not canned & processed junk!

I made the quick version of this dish last night using stewed low salt diced tomatoes with Jalapenos and Chipolte Chili Powder as substitutions. I also halved the recipe and it came our wonderful. It's a keeper!
