  • 1 cup butter, softened
  • 12 cup sugar
  • 1 12 cups brown sugar
  • 2 eggs
  • 12 tablespoon vanilla
  • 2 (6 ounce) bags chocolate chips (best quality)
  • 1 (6 ounce) bag toffee pieces
  • 1 12 cups pecans (or walnuts coarsely chopped)
  • 2 14 cups oatmeal (finely ground to 4 cups)
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 3 12 ounces Hershey Bars, finely grated

  • Place oatmeal in food processor, grind until a fine powder.
  • Grate Hershey bar.
  • Mix flour, baking powder, baking soda and salt, set aside.
  • Cream butter and sugars in large mixer bowl.
  • Add eggs, one at a time, then vanilla.
  • Slowly mix Hershey bar into sugar mixture.
  • Add flour and oatmeal 1 cup at a time, alternating until all is incorporated.
  • Stir in Heath Bits, Chocolate Chips, and nuts.
  • Roll into to one inch balls, or use cookie scoop. Place on cookie sheet.
  • Bake at 375 degrees for 8 minutes. Cookies should still be slightly underdone.
  • Move to wax paper lined counter to cool, do not use wire racks.
  • VARIATION: Substitute white chocolate chips for chocolate and Macadamia nuts for pecans.
  • VARIATION: Omit grated Hershey bar, add one teaspoon cinnamon and substitute raisins for the chocolate chips.

  1. When I was a teenager Christie's Cookies had a store next to the photography booth I worked at located inside the Opryland Theme park. This was 1991ish. They were amazing then. They are amazing now. The first time I made this recipe was before I had a kitchenaid. I had a JC Penny brand stand mixer and smoke started coming off the motor. Its pretty thick. The Goodwill stand mixer died that day but it was worth it. At that time that stand mixer was decades old and it did come from Goodwill as that was all that I could afford.

  2. I’ve never had the pleasure of Christie’s cookies, but this recipe was fantastic. I only used Wilbur dark chocolate chips (from Lititz PA) & the cookies came out moist, chewy & absolutely delicious.

  3. I made these and halved the recipe, it made 36 medium sized cookies. A large bowl is needed and a strong arm! We do not have toffee chips here in Australia, so I added 200g (about 8 ounces) of diced jersey caramels instead. Although not the best option, it is all I could think of. A great blend of flavours, just wish I had access to all the ingredients! My four children and husband loved them. Note - don't eat while hot! The caramel is VERY hot!!! Be patient and wait, your mouth will thank you.

  4. These are excellent cookies! Not exactly Christie Cookies but very good anyway. I split the recipe and made half chocolate chip and half oatmeal. I will definitely try the white chocolate version and maybe try putting Peanut butter chips in the chocolate chip cookies.

Tweaks

  1. I made this vegan by replacing the butter with Earth Balance margarine and the eggs with three tablespoons of aquafaba per egg. I do love butter and eggs but was making this for someone in my family who has allergies. I also replaced the toffee bits with extra nuts. Oh, and I toasted the nuts before adding them. Everyone who had these loved them. I did have to adjust the cooking time. What worked for me was 325°F for 12 minutes. My oven may run a little hot.
